There's not really a name for what she is, but she mainly resembles a blimp, who's somewhat shark-like in appearance.
Olivia herself used to be a human, before setting up some cursed balloons while trying to set up for a party, turning her into what she is now. It could have been worse, considering she seems to be doing pretty good, forming a support group for people who've been taken away from their human forms.
Turning into a blimp must be frightening! Imagine what it would feel like to expand out, losing your once-familiar anatomy, for it to be replaced with something alien, round, and balloon like.
Those tiny limbs really doesn't seem too useful, they're clawed like the arms of a mantis, yet so scrawny. Mabye you could still type on a keyboard, at least, so there could be some things you could use them for! Though, anything related to holding seems to be out of the question here. It seems that dexterity was merely a luxury of being human.
Not even your face would be familiar to that of what you once were. Where your nose used to be would now be replaced with the pointed tip of your blimp-like body. Your mouth is still underneath, except significantly wider than before, with your teeth now being razor-sharp like the teeth of a shark.
A ring, surrounded around your nose, outside your mouth would hold your eyes. 3 eyes on each side, leaving you with 6 total. Rather than them being white like eyes would traditionally be, they're almost completly black, except for your glowy white pupils. It feels odd having your eyes be so distant from your face, and so many of them making it disorienting to. It seems like you'll have no choice but to get used to it.
At least you look somewhat cool, you haven't lost all dignity yet! You have some neat motors by your side, with red triangular appandages placed around it. Theres also a lot of that around your back, and it looks somewhat nice.
Luckily, despite your changes, you can still move around and communicate with humans as you've always been able to. A lot of things you once took for granted might be difficult though. You can't even bring yourself to the ground, even with assistance! No matter how much you reach, or how much you're pushed, you'll always find youself suspended in the air. Another pain would be your size, you're so much larger. At least you can still fit through most doors, which is good enough.
Most likely for you, and definitely for her, you'll find this to be permanent. Trying to salvage your humanity would be fruitless. It'd be better to embrace your new form. That's not to say you're losing out on everything once familiar to you, I reccomend that you think outside the box! Find new ways to do things! You might be a blimp, but you still have the intellegence of a human, and you could still live a live similar to one.
Additionally, have these kaomoji I made of her:
